with these grinder sliders
Ordered- This Bees and Blooms Wreath Ribbon. I love it. It is great quality and will bring our front door right into spring. I see myself buying 4 for all the seasons.
Planning- My sons 8th Birthday. He loves hockey so we will be planning the birthday at our local ice rink. I saw these on etsy and I know he will just love his face on all the cupcakes as toppers. It will add a fun personal touch as well.
Organizing- I have the spring cleaning bug hitting early, I started with my hosting closet last week and I am moving onto my kitchen this week. I have so much to share on this topic I might just create an entire post on it.
Watching- White Lotus on HBO. I loved season 1 and 2. I am trying to remind myself that the first few episodes were slow to start… Tanya was one of my favorite characters of all time so I am still upset she is gone.
Feeding a Crowd…
Over the weekend, we had an end-of-season celebration for one of the hockey teams at our rink. One of my favorite families hosted, and the mom asked everyone to contribute an appetizer or side. Feeding and entertaining 30+ adults and 40+ kids is no joke, so I wanted to bring something easy to assemble.
Last year, I went with my go-to charcuterie board, but this time, I wanted to switch things up. I decided on grinder sliders, and they were a huge hit! These are a fantastic way to feed a crowd, and the best part is that they can be prepped ahead of time with minimal active cooking—exactly what I aim for when hosting or bringing a dish to someone's house.
You can easily customize these sliders in so many ways—Reubens with corned beef, sauerkraut, and thousand island dressing; turkey and pesto; Cubans with ham, swiss, pickles and dijonnaise —the possibilities are endless. Their small size makes them the perfect party food, and since they can sit at room temperature, they’re ideal for gatherings.
Grinder Sliders (makes 24)
24 Mini Brioche Buns or Mini Hawaiian Rolls
1/2# Salami, sliced
1/2# Soppressata, sliced
1 1/2# Turkey, sliced
1# Provolone Cheese, sliced
4T Butter (melted)
1t Garlic Salt
1T Parsley, chopped
1T Parmesan Cheese, zested
1C Mayonnaise
1/2C Red Wine Vinegar
1/2C Pepperoncini, chopped (you could also sub Giardiniera for a spicy kick)
1T Italian Seasoning
1T Garlic Salt
1 Head of Lettuce
6 Tomatoes
1/2 Red Onion
If you are cooking right away preheat your oven to 350 degrees.
Using a bread knife slice the the buns in half. Place the bottom of the buns on a oiled baking sheet (I like the evoo spay or avocado oil spray). layer: salami, soppressata, turkey and cheese. Place the tops back on.
Combine the melted butter, garlic salt, parsley and parmesan. Spread the mixture over the tops of the sliders. *At this point you can cover the sliders with foil and save them for later.
In a mason jar combine the mayonnaise, red wine vinegar, pepperoncini, Italian seasoning, extra chopped parsley and garlic salt. Shake the mason jar to combine and add juice from the pepperoncini as needed. *At this point you can save the dressing for later in the mason jar.
Using a mandolin or your knife slice the head of lettuce, red onion and tomato very thin. *At this point you can put these items in bowl or plastic bag for later.
When you are ready to cook & assemble the sliders:
Bake for 20-30 minutes at 350 covered, until the cheese melts. Cook another 5 minutes uncovered or until the top bun is golden.
While the sliders are cooking, toss the lettuce with your dressing.
Remove the top bun and add the lettuce mixture, red onion and tomato.
Put the top bun back on and cut through the buns separating them for easy serving.
